Meatball with mixed fruits sauce.


I like to invent and try to cook different types of food for my twins. They enjoy eating. Every time I ask them if they are hungry, they would run to their high chairs with excitement. As a mom I feel happy to see them like the food I cook for them and feel disappointed when they dislike my cooking. The girls like to feed themselves using their hands. It is quite challenging to come up with finger food each meal. They main carbohydrate dish is usually macaroni and cheese or mixed bean salad. I usually have cantaloupe, peach, pear, apple, banana and extra fruit cups available when I need them. The girls eat pretty much everything I give to them. I was surprised that they prefer steam broccoli and squash to mashed potato. They like chunky food, I assumed.
This morning after we all had breakfast, we took a long walk at nearby park. The girls enjoyed riding in a stroller. We took our dog with us. When we got home, the girls took some milk and went to sleep on a the floor. They are pretty good at putting themselves to sleep. I got some extra time to fix them lunch so I invent this meat ball recipe that I want to share with you. I hope they like it.
Ingredients:
2 lbs ground beef
1 cup cracker or corn chip crumb
1/4 teaspoon salt ( I put more if I make it for myself)
1 egg
1/2 tsp garlic powder
1/2 tsp parsley flake
1 Tbs veg oil
2 tbs corn starch mix with 1/4 cup of water
3 mix dole fruit cup or 1 can chopped pine apple
1 Tbs brownsugar
Direction
Mix ground beef, cracker crumb, salt, egg, garlic powder, parsley flake in a mixing bowl using your hand.
Shape mixture into little balls about 1 inch in diameter.
Heat oil in a nonstick frying pan over medium heat.
Gently fry all the meat balls until lightly brown.
Place meat balls on a plate with paper towel to drain fat.
Discard fat from the frying pan and poor all the fruit cup or pineapple into the pan.
Heat the fruit over medium heat until bubbling.
Add brown sugar and cornstarch mixture, stir until thick and clear in color.
Poor meat ball in the pan, gently mix meat ball and the sauce together until evenly coated.
Serve to yourself or family but cut the meat ball first before you give it to your little baby.
I would add little more salt and sugar if I make it for myself but you use your judgement if you want to try. Let me know how you like it, if you do try. I will find out soon if my girls like it or not, we'll see.

  1. So, the girls didn't like the meat ball at lunch time yesterday but they eat them at dinner time. They must not had much appetite for meat at lunch, huh!
